Jhony Melo, an acclaimed specialty coffee producer, hails from the Andean mountains of Anserma, Caldas, Colombia. He dedicates his time to working on his family’s 11 to 12-hectare farm, Buena Vista. Melo is renowned for his exceptional farming practices and innovative processing techniques, which have earned him numerous awards.

I recently had the pleasure of visiting Jhony at his estate. I was thoroughly impressed by his completely self-sufficient farming setup. A motorized lift conveniently starts and stops at the top of Johnny’s personal processing plant, enabling his coffee pickers to effortlessly haul down loads of freshly picked cherries. These cherries are then immediately milled. This particular lot is a field blend of everything grown on the Buena Vista Estate. It's a washed lot so the cherry fruit is removed from the seeds. The seeds after separation are coated in a sticky, sugary "Babas" coating and then fall into a cistern beneath the mill. This cistern captures the seeds for a short fermentation and then are thoroughly washed and laid to dry. The process is simple, fresh, and perfect, just like the cup of coffee that results.

 

Colombia is renowned for its coffee production, which occurs almost throughout the year. This consistent supply of fresh coffee allows roasters like us to have access to it at all times. Jhony and his Buena Vista Estate hold a special place in our sourcing program, enabling us to obtain the freshest coffee possible. Brew Recipe:

V60 or Chemex use a ratio of 1:16 ratio of beans:water. ie: 20g beans/320g water at 198F

Espresso we recommend a 2:1 ratio using 18g of beans and gettting 36g of espresso out. Brew temp of 200f and a Brew time of 24-28 seconds.
