Clever Dripper Brew Guide
The Clever Coffee Dripper is a combination full-immersion/pour-over that brews about 4 cups of coffee. It combines the full-immersion of a french press with a more accurate extraction of a pour-over style filter paper.
For lovers of the french press it yields a significantly cleaner cup, but with the same full body experience. It's a great for home brewing, easy to prep, easy to clean, and takes standard #4 filters that can be found at any local grocery store.
Step 1: Measure out 1000g of water (approximately 4 cups or 36oz.) Tip: only 500g is needed for infusion. The rest will be used to pre-wet the filter paper. |
Step 2: Transfer your water to a stove-top or electric kettle. We recommend a Bonavita. |
Step 3: Pre-heat your water to between 195° and 200°F. |
Step 4: Take a #4 filter and place it into the Clever Dripper. Tip: For better positioning fold a couple of creases along the perforated seams. |
Step 5: Pre-wet your filter with hot water, evenly covering it entirely. Leave about half (500g) of the water for brewing. |
Step 6: Measure about 30g (2 tbsp) of your favorite, freshly roasted Picacho Coffee. Tip: We generally recommend about 30g of coffee to 500g of water. |
Step 7: Select a medium-fine grind setting. If the grind is too fine it will clog the filter, and over-extract the coffee. A burr grinder is a plus. |
Step 8: Drain the Clever Dripper by placing it on top of a carafe or mug. The flavor of the paper filter is now gone, and your carafe or mug is nicely warmed up. |
Step 9: Add coffee, reset your scale to 0 grams, and shake the Clever Drip to level-off the grounds. Tip: Don’t worry if you don’t have a gram scale, the Clever Dripper can only hold ~500g of water. |
Step 10: Check your water temp, and slowly pour from the center out, making sure there are no pockets of dry coffee remaining. Tip: Pour an initial bloom infusion of 100g of water and wait 30-45 seconds before continuing. Never pour directly on the edges or onto the paper. |
Step 11: Wait about 3:00 minutes for the coffee to infuse. Total brewing time is about 4:00 minutes. Tip: Keep the lid on top for heat retention. It’s important! |
Step 12: Remove the lid, and give the brew a few gentle stirs. Tip: Don’t stir too aggressively. Stirring increases agitation of the grounds, and too much can over-extract. |
Step 13: Place the Clever Dripper on top of your carafe with about 1:00 minute left, and keep the lid on top. Tip: Make sure that your carafe can hold all of the brew, so it doesn’t overflow! |
Step 14: Pour a cup. |
