Chiapas, Mexico is known for its high-quality specialty coffee that is grown in the region's mountainous terrain. The unique climate and soil conditions in Chiapas create the perfect environment for producing a rich, complex flavor profile in the coffee beans.

One interesting aspect of specialty coffee in Chiapas is the focus on sustainable and ethical practices. Many coffee farmers in the region use organic and fair-trade methods, which not only benefit the environment but also support the local economy and communities.

About the producer: Macos is an incredible coffee producer applying his craft to  the slopes of the Tacaná Volcano. 35 years old, married and father of two children. He inherited his love for coffee cultivation from his father. Marcos has dealt with an invasive coffee rust attack a few years ago.  He has had to change his crops and varietals over the years to deal with fungal coffee rust break out. Part of his Arabica planting is this lot of 100% Pink Bourbon!

This lot is a washed coffee of the Pink Bourbon variety. It carries a flavor profile more similar to what I find in Guatemalan coffees. On the nose I get walnuts, almond and caramel and on the palate it moves towards a light caramel, almond, citric like acidity that reminds me of clementines, kumquats and pinot grigio. The finish is just straight silk and an incredible cup.
