This 100% Pink Bourbon micro-lot was grown by Wbeimar Lasso at the Las Terrazas farm in Huila, harvested following strict ripeness criteria, and floated and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved.

Dose: 33g
Grind: Medium fine
Water: 500ml at 197 degrees Fahrenheit
Bloom: 50ml of water saturating the coffee.
2nd Pour: Pour in tight circles until 300ml
Final Pours: Add 20-40ml of water each pour until reaching 500ml. Allow coffee to drain almost fully between pours.
Final Brew Time: 4 minutes
