Nestled in the heart of Colombia, Huila is one of the country's most renowned coffee-growing regions. Situated in the Andes, it boasts exceptional altitudes, fertile volcanic soils, and diverse microclimates ideal conditions for producing high-quality specialty coffee. Here, a dedicated community of coffee growers channels their passion and expertise into cultivating beans with vibrant acidity and distinctive fruity notes. Many have embraced regenerative agriculture, restoring soil health and biodiversity while enhancing coffee quality. Under Huila’s warm sun, these coffees develop their signature profiles, reflecting the region’s deep-rooted coffee heritage.
The process begins with a controlled fermentation period of 20 to 24 hours, allowing natural enzymatic activity to remove the mucilage. Following fermentation, the beans are carefully washed to ensure cleanliness and then sun-dried on patios. This drying stage enhances their complex and balanced flavor profile, capturing the essence of their origin and delivering a vibrant and refined experience in every cup.
Colombia holds a special place in our sourcing program. Due to various micro climates it produces coffee almost all year round. This means roasters like us have access to fresh coffee all the time. It is also an origin where we source directly.

Brew Recipe:
V60 or Chemex use a ratio of 1:16 ratio of beans:water. ie: 20g beans/320g water at 198F
Espresso we recommend a 2:1 ratio using 18g of beans and gettting 36g of espresso out. Brew temp of 200f and a Brew time of 24-28 seconds.
