Luz Helena Salazar is a coffee producer located in Quindio. She is married Jairo Arcila and they have two children together, Carlos and Felipe Arcila, who are the co-founders of Cofinet, an export/import business for their coffee.
This coffee was grown at Finca La Leona. Coffee was harvested following strict ripeness criteria, floated and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and dried in temperature-controlled conditions until the ideal moisture content was achieved.
This microlot is 100% Pink Bourbon. The varietal is currently under research in order to determine its origin. It is said that it is a mutation that took place at 2100 m.a.s.l in San Adolfo, Huila.
An incredible cup with tasting notes including raspberry, lemongrass and honey.
Chemex
Dose: 1:16 20g/320ml
Grind: Medium fine
Temp: 197 degrees Fahrenheit
Bloom: 50ml of water saturating the coffee.
2nd Pour: Pour in tight circles until 180ml
Final Pours: Add 20-40ml of water each pour until reaching 320 ml. Allow coffee to drain almost fully between pours.
Final Brew Time: 3:30 minutes
