Another gorgeous cup of sunshine from our friends at Equation coffee. A supreme blend of body and acidity. Warm maple and caramel tones dance across the mid pallet while pleasant sweet stone fruit like acidity grabs the sides of the tongue. Reminiscent of white peach and dried apricot. This lots excels as both pour-over and espresso.
Brew Recipe:
V60 or Chemex use a ratio of 1:16.7 ratio of beans:water. ie: 20g beans/334g water at 198F
Espresso we recommend a 3:1 ratio using 20g of beans and get 60g of espresso out. Brew temp of 198f and a Brew time of 24-28 seconds.
About the Farmer:
"La Lomita," home to coffee producer Eulises Guzman Serrato. At more than 1,760 meters above sea level, this fertile land is where Eulises has dedicated his life to coffee cultivation, learning from the wisdom passed down through generations of coffee growers.
Eulises, well-known in the El Carmen village, has transformed five hectares of land into a paradise for coffee varieties. On his farm, Pink Bourbon and Caturra coffee plants thrive, with the varieties he selected for their adaptability to the region's climate and unique flavor profile that delights the most discerning palates.
Eulises' passion for quality is reflected in every step of the cultivation and production process. From the careful picking of each coffee cherry to the controlled 48-hour fermentation, Eulises ensures that every bean tells a story of dedication and love for the craft.
Drying coffee is an art in itself at "La Lomita."
Under the Huila sun, Eulises uses traditional parabolic dryers, which allow for slow and even drying, essential to developing the complex flavors and aromas of his coffee. This technique, although labor-intensive, ensures that the final quality of the coffee is exceptional.
Beyond his dedication to high-quality coffee, Eulises has become a community leader committed to improving the lives of his neighbors and protecting the environment. Aware of the challenges facing coffee farming in his region, he has adopted sustainable and agroecological practices, promoting the conservation of natural resources and local biodiversity.
Eulises organizes workshops and meetings on his farm, sharing his knowledge about regenerative farming techniques and responsible soil management with other farmers. This shared vision aims not only to ensure the long-term viability of coffee farms but also to strengthen the social and economic cohesion of the community. For Eulises, growing high-quality coffee goes beyond the harvest; it's a lifelong mission that includes caring for his land, his people, and the legacy he will leave for future generations.
