It’s a balanced, clean cup with a great body that excels either as a pour over or a single origin espresso shot. A fantastic aroma, and notes of apricot and persimmon with a caramel sweetness blended with jasmine accents.
Maria is a second generation coffee farmer who lives with her parents in the town of San Marcos Huista, outside of Jacaltenango, Huehuetenango. Her parents gave her part of her inheritance back in 2016, a portion of their farm for her to manage herself.
“As a woman and a young person, it can be tough to learn all that an experienced coffee farmer knows. Growing coffee is always a challenge, but through the cooperative and the partnership I’ve formed with other farmers, I’ve been able to advance and find success.”
The farm name, Tzoloj, is in the Popti Mayan language and refers to a type of herb that grows in this region. This herb is popular in the region’s traditional dishes.
Maria has a depulper and hopes one day to electrify her depulper and modernize her small home wet mill.
